Delicious, quick, simple, fun, kids-friendly… what else could you expect from a recipe? Oh yes, it’s healthy and inexpensive. And being a coca, if you don’t like some of the ingredients you just need to replace them for pretty much whatever you like. Although we quite fancy the sardines, tuna and anchovies coca that combination we bring you today… Hope you enjoy it!
INGREDIENTS
- For the dough
- 15 g Dried yeast - Dissolved in 8 tsp of hot water
- 600 g Plain flour
- 2 tbsp Salt
- 300 ml Water
- 3 tbsp Extra virgin olive oil
- For the toppings
- 100 g Sardine pate - You can buy the sardines pate in any big supermarket or make it yourself by blending a tin of sardines in oil, some drops of lemon juice, a nut of unsalted butter, salt and pepper.
- 100 g Tuna steak in olive oil
- 6-10 units Anchovy fillets
- 1 unit Tomato - Small
- 1/2 unit Red onion - Medium-sized
METHOD
- First of all we need to make the dough. To do that, search for the 'How to make Catalan coca' recipe and follow the instructions.
- Once we have the coca dough ready, spread the sardines pate all over the coca.
- Julienne the onion and spread it over the pate. Then sprinkle the crumbled tuna.
- Cut the tomato in paper-thin slices and place them on top.
- Decorate with the anchovy fillets.
- Place in the oven at 220ºC for 10-15 minutes or until golden, being careful not to burn the coca.
- Let cool it down and serve.
